When you get everything right I would say the espresso is the best there is on a stovetop today...
I agree. Since i have a Bacchi, i stopped using this coffee machine for personal use Giordano Robbiati patented, apart from foaming milk with it once a week.

Grind? Cant answer. Depends on grinder, age of beans, humidity etc.
        Beans? Everyones taste is different.
Maximise extraction? Dont understand. If you mean make the best then theres a world of variables out there.

            Re: Bacchi Espresso

Grind as you would for an espresso machine. Which is to say fairly fine- but not powdery. As thunder said you can adjust this basic level according to taste and bean, etc.

With the Baachi it is best not to tamp the coffee- just fill the basket to the top- tap it on the bench to let it settle a little and then put it in place. When you tighten the lid the top part will tamp the coffee automatically. Once you get started you can experiment a little with the grind to see what works well. 8-)

              Re: Bacchi Espresso

Anybody experienced "backfiring" with the Bacchi, when opening the valve to release the coffee....?

Ive had mine a few months and have noticed recently a charge of "air" often being blown from the base of the m/c at this point in the process, it blew the flame out the other day....

I have been careful with the machine, it appears to have no defects, the bottom seal is intact, it hasnt to my knowledge been mishandled, I am careful to ensure the "boiler" is assembled so as to ensure aan accurate seal at the bottom.

Scratching my head on this, the manufacturer has no comment.......

are you always tightening the top clamp fully?

Otherwise there may be a small defect in the bottom large o-ring seal?

                  Re: Bacchi Espresso

Ha ha.... I tighten the top just so, I had to make a device to give me enough leverage to undo it when done...! Im completely in the dark, everything looks good... I currently have the body, with a lick of water in the bottom, sitting on a piece of paper towel, to see if there are any pin holes in the casting.....

are you sure it isnt the seal? even a tiny imperfection could cause a leak...

                      Re: Bacchi Espresso

Ive had a similar thing where theres at least a puffing sound as you open the tap...I thought maybe it was the bottom seal on the piston letting a little air slip out as it moved up the cylinder?

                        Re: Bacchi Espresso

I think it must be the seal, cant be the base, the "puffing" as sniff accurately describes it occurs in a different location each time. I just wouldnt have thought it was old enough to have worn out, but there you are, I understand there are seals and there are seals... I will endeavour to find a replacement....

I have the replacement seals available (and other parts). Does this puffing affect the brew at all?

                            Re: Bacchi Espresso

Excellent...! Will I go back to your website and order a seal kit...? (I dont remember seeing any seals there a while ago...) Just let me know how to do it. Does it affect the brew....? Well, you know, it seems to me that when Im getting the "puffing", the crema is a little more... blond... We still enjoy the coffee, this is a pretty fancy machine for us (We did have a loaner Europiccola briefly, thats a benchmark...) its just that it all adds a certain tension to making a coffee: "will it or wont it, " this time....

sorry- I dont have the parts listed on my website yet. But I will add them soon. I will send you an email with the details for getting a set.

                                Re: Bacchi Espresso

On further pondering I wonder whether the puffing is coming from one of the pressure valves in the central chamber? The only problem with my theory above is that if the air were escaping from the inner seal as the piston moved up youd think the air would puff up rather than down.

I have noticed with my Bacchi that occasionally I will set it up and getting a hissing/sizzling from the bottom. This sound comes along before the proper hiss from the first pressure valve, and when it does happen the proper hiss and subsequent whistle dont eventuate, so I just guess when to open the tap.

I suspect it occurs when the top part of the machine is just slightly off when placed on the bottom part/seal. If you put the top on the base there is a little play.

The Bacchi does make excellent espresso, identical to the espresso I get from my little Lelit. Not the same as the espresso from my Lusso, which seems to have more density than the other two... :
