Quite a few in Melbourne use Syphons. The Auction Rooms in Nth Melb, The Sensory Lab at David Jones and also sell them as does Sorrentina from a few posts up.
As I seem to remember you were a poor student (been there done that) have a look at getting to a few of the cupping session offered at some of the roaster/coffee venues around town. Generally free and weekly Market Lane, Seven Seeds, Coffee Supreme are a few. Great way to get into different non espresso coffees and raise the knowledge.
Skip a day of school this Thursday and come coffee crawling with Redzone and I
9am start at Elevenses, 10 am cupping at Seven Seeds ..... until we are a buzzing
