I'll make a brew up at work each morning this week and see how it develops, got a feeling I still took the roast a bit far, I pulled it at approx. 206 deg ,I hit 1st crack at 196 and generally 2nd crack comes approx 216 .

Hi Trevor,
How far do you take your roasts for filter ?
I have been drinking a Rwandan bean through the CCD this week, but I had roasted it for espresso.

Hi Naki
Yirg is great in the CCD, lighter roasts are preferable to bring out the flavour nuances from the bean without any influences from the roast. Try and source some filter roasts from local roasters, I love Kenyan, Yirgacheffe, Rwandan, Burundi, Guatamalan as pourovers.

Thanks for the reply, I just ordered some of the new Japanese papers, I was using the original ones I had from when I purchased the CCD from you know who,
I am a bit of a novice at filter so still playing with a few different beans and roast levels and grind size etc
I'm gona try some yirg which I think work well.

Great question, and not sure if it's been covered in the past. I did a filter comparison some time ago.
it's on my blog: The Beaning of Life
sadly the images don't work since I migrated my blog, I'll need to try and sort that out.
The best filter is the one that doesn't clog, and the cup tastes damn good.
keeping it short, the best filters I've found are the Japanese ones currently being imported by a company that starts with the number five and ends with the word senses.
you can buy them from their roastery in Rockingham, or the Barista Academy in Northbridge. I'm happy to lend you a few examples of different filters to play with!
I'm happy to chat more privately, the clever dripper is one of my fave brewers.
