Thats the only measurement that is important and if its not hot enough, then maybe you can make yourself a shortish Long Black to pull the temperature up a bit. Extracting espresso with too high a temperature will burn the coffee with the result that it will taste really, really bad in the cup.
Espresso is what it is, so if you need to modify it in some way to make the drink more pleasurable for you then that needs to be done after the espresso is in the cup or in the case of a Long Black, on top of Hot Water (not boiling) in the cup.

Everything is perfect right now... Plenty of water and steam.
I simpy measured the temp of the water in the cup.
Not trying to get that perfect temp but a hotter espresso would be great.

Hi guitarboyled,
Glad to hear youve sorted the water flow problem out.
How are you measuring the water temp? I can tell you from experience, its quite difficult to get an accurate temp measurement from the group head. short of buying a scace device for $500, the only other way to reliably measure the temp is to buy a bead type thermocouple and dose the handle as normal then carefully place it on top of the coffee. If there are any leaks around the group seal, then youll probably receive a low reading.
Does the coffee taste good? If so, ignore any temperature reading youre getting. The fact is, a HX system is more likely to run hot than anything else.

I dismantled the diffuser and shower screen and let them soak in cleaner.
I then did a few back flushes with the cleaner.
And now the low flow problem is gone.
I’m figuring the 3 way valve was stuck or something. Not sure why it would influence the flow only when the machine was hot.
*** My new problem is low coffee temperature ***
I know I can increase it by turning the adjustment screw on the Sirai pressurstat but how many turns can I do without damaging it.
My espresso is around 60°c right now.
Also how do you measure the deadband of the pressurstat?

Theyre closed until Monday Ill bring it in then.
From looking at the inside of the machine Im figuring the only adjustments possible are the height of the water sensor and the pressurestat.
Could lowering the pressure in the boiler help my situation?

12 bars is way too high. The espresso will be thin and grassy. Ive been playing around with brew pressure on my time off over the Christmas break and can say first hand, 8.5-9 bar is the sweet spot.
I would still hit up the company for the warranty and see if they will replace the pump.

I build a portafilter pressure gauge.
The pressure builds up slowly to 12 bars and pretty much stays there.
The flow is still intermittently stops.
Lots of vapour accompanies the water coming out of the group.

The steam power comes from the boiler and is related to the pressure stat setting and water level. Its going to be unrelated to your current problem.

Its my first experience with a HX machine but yet I still think the vapor is too hot. I have only but a few seconds too froth the milk before its over heated. Dont know if this is any kind of indication.
I also get loud pops on startup when the element heats up. Is this normal?

which appears to be the same problem and was solved by a new pump. I would take up the warranty if I were you. Failing that, shouldnt be hard to replace yourself.

The sputtering in the second video indicates that the water is being overheated in the HX. Presumably because not enough is flowing through and what is there is being superheated.
Can anyone enlighten me, do the Oscars have a thermosyphon like an E61 HX?
If you choose to go down the fix-it-yourself route, I would suggest a descale of the HX (boiler probably not necessary to be done)
Ive also seen the coil on a solenoid work itself loose and fail to engage properly. Make sure the coil is seated properly and the bolt to keep it in place is nice and tight. The solenoid could also be gunked with scale. Another reason to do a descale.
Could possibly be a pump problem that only presents itself when the pump is hot?
