    Yep, I saw the mouse tailing too...but I wasnt sure because the video wasnt close enough to the espresso.

    Mousetailing can also be from stale coffee...which could explain the lacking crema.

      Thank you for your comments. The puck was dry (well drier than the sloppy ones I used to get on the Sunbeam Latte which did not have that solenoid? valve) but I have seen drier pucks in cafes. Still havent managed a really dry puck. Also, they dont often come out cleanly - there is often about 10 or 20% left behind. Am doing the Sunbeam course in a couple of weeks so will also see what happens there.

      Re dosing - I was keeping the coffee at 14 g in the double basket. Trying to limit the variables! But later tried 16 g and so perhaps should just try to fill the basket.

      Thank you for the advice re beans. I am in Sydney, so looking for a good roaster. The shop I went to said she had some single origin beans, but I wasnt sure what to ask for. This coffee journey just leads from one thing to another - I thought it was all about the machine!

        up the dose to at least 16 or 17grams...youll get better results

          Gday Kay,

          For overall ease of consistency in dosing from one bean variety to another, its far more practical to dose by volume using a simple repeatable method thats comfortable for you to use consistently. A really great method is described by Chris Natoli of Talk Coffee in a couple of threads so a search through the forum might highlight that one for you.

          Dosing by weight alone is fine if youre only ever going to be using one bean/blend variety and the ambient conditions are always the same, etc etc. If you observe some of the best baristi in action not too many of them weigh out their doses so this gives you a bit of an idea of the impracticality of it. The concept of the nominal 7g/14g dose weight for singles and doubles respectively is intended to be a guide and is NOT set in concrete so long as your doses are somewhere in this ballpark but much more importantly, is that you dose consistently. Yeah I know, you get sick of seeing or hearing that word "consistent" all the time but it is the essence of being able to produce high quality shots day in and day out.

              On my em6910 I find 18-20g does the job very nicely in the double basket for me.
              Any less and the pucks fall apart and increase the likeliness of channeling, any more and you can feel it compressing against the shower screen. From memory I put around 12g in the single basket.

                  In a very simplistic way, just look at the espresso dial on your machine.

                  If it goes into the brown area, its probably just about right. If it goes red, then youre either tamping too hard, packing too much coffee into the porta filter or grinding the beans too fine.

                  If its in the golden half of the dial, its pouring too quickly and not extracting the crema properly.
