    In a very simplistic way, just look at the espresso dial on your machine.

    If it goes into the brown area, its probably just about right. If it goes red, then youre either tamping too hard, packing too much coffee into the porta filter or grinding the beans too fine.

    If its in the golden half of the dial, its pouring too quickly and not extracting the crema properly.

    On my em6910 I find 18-20g does the job very nicely in the double basket for me.
    Any less and the pucks fall apart and increase the likeliness of channeling, any more and you can feel it compressing against the shower screen. From memory I put around 12g in the single basket.

    Gday Kay,

    For overall ease of consistency in dosing from one bean variety to another, its far more practical to dose by volume using a simple repeatable method thats comfortable for you to use consistently. A really great method is described by Chris Natoli of Talk Coffee in a couple of threads so a search through the forum might highlight that one for you.

    Dosing by weight alone is fine if youre only ever going to be using one bean/blend variety and the ambient conditions are always the same, etc etc. If you observe some of the best baristi in action not too many of them weigh out their doses so this gives you a bit of an idea of the impracticality of it. The concept of the nominal 7g/14g dose weight for singles and doubles respectively is intended to be a guide and is NOT set in concrete so long as your doses are somewhere in this ballpark but much more importantly, is that you dose consistently. Yeah I know, you get sick of seeing or hearing that word "consistent" all the time but it is the essence of being able to produce high quality shots day in and day out.

    Thank you for your comments. The puck was dry (well drier than the sloppy ones I used to get on the Sunbeam Latte which did not have that solenoid? valve) but I have seen drier pucks in cafes. Still havent managed a really dry puck. Also, they dont often come out cleanly - there is often about 10 or 20% left behind. Am doing the Sunbeam course in a couple of weeks so will also see what happens there.

    Re dosing - I was keeping the coffee at 14 g in the double basket. Trying to limit the variables! But later tried 16 g and so perhaps should just try to fill the basket.

    Thank you for the advice re beans. I am in Sydney, so looking for a good roaster. The shop I went to said she had some single origin beans, but I wasnt sure what to ask for. This coffee journey just leads from one thing to another - I thought it was all about the machine!

    Yep, I saw the mouse tailing too...but I wasnt sure because the video wasnt close enough to the espresso.

    Mousetailing can also be from stale coffee...which could explain the lacking crema.

    Just looking at the video, I thought the pour was acceptable however I noticed mouse tailing. Id be interested in your pucks as to what they looked like... but it does look like youre underdosing a bit...also the crema looked a bit lacking considering the beans had robusta in it...so edging towards stall beans I would suggest...

    Javaphile comments are also good...

    No matter where you are, if its freshly roasted beans your after and unsure what really takes your fancy, then my suggestion is that you go here...

    Hey Kay,

    It appears the shot was a bit on the slow side and also over extracted. Stop the pour/remove the cups at the first sign of blonding. Aim to get 2oz (using the double basket) in 25-30 seconds. Keep your tamp constant and your fill level and adjust the grind of the coffee as the variable. Get it int he ballpark and then adjust by taste.

    If you want a known good bean to use so you can concentrate on your technique rather than worrying about whether the beans are any good might I suggest you get some nice fresh high grade CS Brown from Andy via BrownBay.

    Kay, perhaps the Robusta content was too high...and that was why it was bitter... Ive had Robusta blends before and it did nothing for me...

    We bought some beans from a local roaster, their own blend that was a mix of arabica and robusta but dont know more than that. This was the first time I have been to a roaster, as I have so far used beans from the supermarket, or I buy some Vittoria from the coffee shop at work (the owner says he gets his beans each week from Vittoria).

    However I noticed that this pour went blond more quickly than other pours I have had.

    Comments appreciated - did it blond too quickly or is that normal? Is it a function of the beans?

    And how did it taste?! This coffee was too bitter for me and not much aroma. So we are going back to the roaster this weekend to ask to try something else. Still searching for a good coffee!

    I found it to be helpful so far as the sounds. I was doing a 30 sec pour but I thought my pour was fast but when I ground finer and tamped harder the machine sounded like it was going to blow, I even covered my face just in case. So seeing this vid and knowing that yes it does sound like it struggles but thats ok.

    So am I on the right track?
