Having recently purchased a new silvia + rocky combo, I have managed to turn out a few drinkable shots, but nothing great so far.
Using the standard issue double basket, I have ground 14g directly into the portafilter, then used a paperclip to distribute/break up any clumps - this leaves the grinds quite fluffy and the portafilter only just overfilled.
After tamping the puck sits approx at the height of the ridge in the basket.
My problem is that the shot is typically all blonde after around 10-15sec, the resulting coffee is generally quite bitter. Reducing the grind gradually ended up with it being so fine that a fair amount of sediment was left in the bottom of my cup.
Some of the pucks have been stuck to the grouphead after removing the portafilter, others have had a bit of water on top but generally held together after being knocked out.
This morning I tried increasing the dose a little, even so the shot came through a bit fast - it was drinkable but not "good".
The beans I am using are reasonably fresh, bought from a local cafe - the same blend the barista there uses to make some rather good coffee.
Previously using a different blend and no "WDT", I had been unintentionally overdosing with a coarser grind and ended up with around 60ml after around 25sec - this seems odd since I was reading that improved distribution would reduce the chance of channeling...
Thoughts?
