Re: Learning how to make espresso with my 6910 again

You will be sweet matey...the fact that you are chasing down the variables is testament to that.

Knocking down is a method that I gleaned from Chris at Talk Coffee years ago and works well. Try searching for Maltamp or nutating tamp on this site and see how that works to...works very well I reckon to further reduce the incidence of channelling as does knocking down.

    Cheers

PS. Cant be your bean freshness then.

PPS. Cant be the quality of your grinder either

Currently using brazil peaberry 3days old (home roast).
        Hi Tony
Not machine related, but it may explain the lack of taste.
As espresso, I really love this bean but find it take at least 8-10 days before flavours really develop and I would say it peaks at 12-15.

        Keep at it.

Re: Learning how to make espresso with my 6910 again

Wow, interesting to see that Im not the only one who still have trouble pulling a good coffee shot after all this time. I only have my EM6910 for about 2 months (way shorter than your 1.5 year experience). Initially I have some old beans but now I have the fresh Golden Cobra beans from Cordial Newtown. Im grinding my beans with Sunbeam EM480 grinder, even at the finest setting, my pour still comes out more like a gush than drip. The whole 30ml pour only last 12-15 seconds, way shorter than the ideal 30 seconds. I do see only little crema on my coffee and I think I can do better than that.

Another issue is still trying to get microfoam with milk steaming. I must have pulled over 50 shots by now, still cant pour a rosetta leaf. Oh well :-(

Noodle it sounds like you may want to call sunbeam and get some spacers sent out for your grinder (so it can grind finer).

Noodle - sounds like your grinder needs adjusting. Contact sunbeam and ask them for the washer kit for the EM0480, then follow the instructions that they should send with it (or alternatively, search in the grinder section for the instructions) it will help with the pour times (assuming fresh beans and proper dosing).

Great looking cup there Sugilun - Tony, my foam is usually much thicker / more dense so isnt condusive to art (eiher that or my technique sux)

Re: Learning how to make espresso with my 6910 again

You need to persevere, only use fresh beans, store them in an airtight container  and ideally grind as required.  Watch the DVD for clues, and if its still on offer attend the free barista class that Sunbeam runs - very worthwhile.

I also have the EM480 and have had to remove a couple of washers because I couldnt get a fine enough grind.  Speak to someone at Sunbeam on their 1800 number for directions - very good support and advice is available.  The EM480 grinder is not consistently calibrated in the factory which is unforgiveable but theres an easy fix as explained above.  Sunbeam sent me a pack of ground coffee that I could use as a reference point (I ask ed for this) in view of the fact I had to remove the washers.  After all, why should you waste your own coffee until you get the grind right.

Are you tamping the coffee correctly?  I was advised to tamp the coffee in 2 stages ie 3/4 full and full.  Made a big difference.  So you need to get the grind right and also the tamping pressure.

I only achieve good microfoam when using fresh full cream milk (UHT ruins a good coffee).  Too bad if you insist on skinny milk - Ive given up.

I have called Sunbeam customer service and they will be sending me some washers. Ill try my hand in installing it next week when I receive them.

In the mean time, thats a beautiful rosetta leaf you got there, Sugilun. I could never get that fine microfoam at all. My milk froth always come up thick. That cofee grind you got in the above pictures do appear finer than mine, though cannot 100% certain just by looking at them.

It is simply because we are using a different grinder~~~

I use a finer grind :-) But the dosing looks OK...

                              Keep on working at it...
