    I like the idea of trying to get the brew done ASAP (hoping to preserve the flavour), so to my mind (without a crotchless to check) the simpler the better... and messing with the grinds might leave wakes leading to channelling. I wonder if a level, shake or nutating tamp would get the grinds even enough...?
    I see what youre saying - Im always looking to make things as quick and simple as possible and have been playing since I read one of your posts. Have stopped the "needle flicking" step of the WDT, but still use the funnel. Do get a little bit of clumping and uneven distribution from the 408, but the settling taps seems to correct. Have done about 5 doubles now and no noticeable difference, so thanks for planting the thinking seed.

    Still wondering if anyone has any opinions regarding using filter baskets that hold closer to 14g rather than 20ish? Ive always thought more is better, but have heard a few people swear they get better shots with smaller baskets. Any thoughts??

      Yeah, I like using the funnel too.
      Im glad my musings have helped at least a little!

      Im still on my baby steps and dont have a way yet of comparing a 14g vs 21ish gram basket on my presso

      Thoughts... well some people prefer the art of a doppio (or even a normale) vs the triple basket ristretto... its probably easier to get a nice thick shot with the ristretto but taste is so subjective...

        I agree, the whole stirring the grinds routine, although it only takes a few seconds feels (and Im sure looks) a bit stupid. Ive tried replacing it with a left-right & forward-backward shaking motion to level the grinds before tapping and tamping and the results seem to be just as good as before..... Cool! This may be the end of the wooden skewer.  Another case of useful advice leading to improvements

        Ive often wondered about this as well. Would like to try a 14 gram sized double if someone can recommend.
        The Sunbeam single is 14 grams but it would be nice to try a double-shaped 14 gram basket.

          Got this from Coffee Parts re the 58 mm 14 g baskets they stock (there are three listed)...

          "Thank you for contacting Coffee Parts.
          The only one of these baskets that will fit the Sunbeam is 521994, however the ridge on all commercial baskets are set at a slightly different height to the Sunbeam, as such they do fit, but don’t always lock in perfectly into the portafilter…"

          So Ill be getting one of those in the next week or so. Will keep you posted ...

            Ok, after reading all of the replies and trying lots of permeatations, my latest is:

            20g coffee ground slightly coarser than my original setting and settled by tapping to make a level portafilter full. Medium Tamped to about 5mm deep.

            This extracts nicely in about 25s and leaves a good dry puck.

              This thread has been very helpful to me, Ive adopted 2 changes to my espresso technique as a result:
              1) Now use tamped coffee level of 5-6 mm below rim.
              2) Replaced WDT with some gentle side to side shakes before tapping.

              Coffee is tasting as good as it ever has, the dripping honey is back too.

                Great to know the thread has been beneficial to those who perservered.
                Sometimes something like this tests the patience of those trying to get it right and its good that keeping at it has ended in a better result or the result they are after.
                I try to improve my shots even though i have been doing it for quite some time now. Just when i think theres not much i can improve, theres things i discover that can be tweaked, and then to keep it consistent thereafter.

                    (Bit off topic for a sec ...) Another upshot of this thread has been that Im about to attempt home roasting after you mentioned youd done it before. Will thank or despise you in the future depending on the outcome

                      Am doing an afternoon of popper roasting (5 greens), and am keeping a record of whats going on using an Android app. Results next weekend, but I really should start a new thread for that...

                        Confused noob, researching first machine including EM6910. I was taught that (on commercial machines) youd want 7g of coffee as a single shot. So why does everyone talk about 10g or more for the EM6910?? Is that to compensate for some kind of deficiency with this machine or is this common to other domestic machines (for example the Rancilio Silvia which seems to be the other machine worthy of consideration)?

                            I think thats a good guess. Word is that Paul Bassett (2003 world Batista champ), who worked with SB to design the thing was/is big on updosing.

                            PS, still havent gotten round to ordering a 14g basket, and might have be a bit delay now as I live in Toowoomba and we had a bit of a hammering with the rain today and the road to here is cut in several places Hope everyone else on CS is OK.

                                Still confused. Strong coffee is fine, but to get a standard shot you need 7g of coffee and 30ml water. Im reading people saying that 7g of coffee is too low in a sunbeam basket and hence soggy puck, and that smaller baskets dont fit the sunbeam non standard handle. So how do I get a standard shot if I am not Paul Bassett or dont share his taste??? :-/
