    I'll add my vote to the "shot first" team. If you have gaps in the crema by the time you've finished steaming, you haven't got enough crema. I don't want to leave my microfoam settling and separating while I'm brewing two pours.

      which ever way gives you the best results artemidorus.

      For me it doesnt take long for the cool flush to bring it back down to brewing temperature after steaming. While it is flushing, the jug is tapped on the bench and swirling the milk.

      Skim milk, and milk that is heated beyond 65 degrees c has a tendency to stiffen, hence my above #7 post regarding milk temps.

        Well, i've found it's ok to use both methods. Firstly I've given up on the 9g basket, I use the next size up (12g?) for a single shot. I use my little 300ml jug for a single cup and pull shot first, it takes less than 30secs to purge and have enough steam to texture milk (the time it takes to empty and clean the basket)...this is the normal way I've always done it. For two cups, it's far better to get the steam pressure up first to texture a 500ml jug....purge wand, head....pull a double shot....pour.
