I have recently purchased a Breville BES920 plus the Breville Smart Grinder Pro. I have been using fresh CS Colombian beans and the double shot basket that came with the machine.
I've been at it for a few weeks trying to get the grind, dose, and tamp right so that I get:
1) First drops / liquid coming through into the cup in 10-12 seconds
2) About 30 mL of espresso in the cup after 30 seconds
3) The pressure on the dial sitting around 8.5 - 9.5 bar once the pre-extraction phase is finished
Our coffee is being consumed as flat white. Whilst it tastes OK (maybe 7-8 out of 10) I just can't help thinking that I'm missing something important and am after advice.
I have read that double shot volume should be 60 mL (and not 30 mL like I am aiming for currently) but that would mean a much coarser grind and / or much longer extraction time than what I am currently aiming for. If I grind coarser then liquid would also start coming through faster, maybe in 6-8 seconds.
If I've been getting it wrong, what volume / times are correct for a double shot basket?
