You'll all be pleased to know that the new batch of milk from Aldi works fine without the "treatment".

    Milk Heresy

OK, well I know this is likely to create a ruckus, but here goes....

We use Aldi Light Long Life milk. Until recently, it has performed well for making flat whites using my La Pav Pro. My wife boasts that she has her own barista. I think she's referring to me. Anyway, I've suddenly been having problems getting good foam. No change to my techniques, everything's clean, etc.

So I wondered if the fat content of the milk had varied and was causing the problem. I tossed around ideas, and then tried spraying the milk in the jug with a quick dash of canola oil cooking spray prior to heating. About a second's worth of spray.

Result? Normal foam, and we weren't able to taste a difference.

    I'm impressed.
