  • Espresso Temp factory or mod on EM6910

I have been thinking about changing the espresso temp on my EM6910. My thoughts have been influenced by what some other EM6910 owners have said, who have expressed they found there shots tasting sour.

I have also read this thread http://coffeesnobs.com.au/YaBB.pl?num=1197367483 And noticed that Javaphile says, if the brew temp is too cold the shot will taste more sour.

What have other owners done with their Sunbeam espresso temp? If you have changed it, can you notice the difference in taste? What do others think?

    Thanks
    Chris

May be your coffee. The em6910 runs pretty much straight line within 0.5 deg C of the programmed temp...this was proved with a SCACE at HOST Milan

          whats a SCACE?

I dont normally find my coffee sour (or too sour). Unless my palate isnt that informed! I normally use a variety of coffee from different places, including my home roast.

Have others increased their espresso temp?

Is that with Milk Based drinks?

Yes. A macchiato is the least amount of milk I have in a coffee, but not always my norm.

Marc, when you say the espresso was still sour at 96, did that sourness decrease with the espresso temp increase? As far as taste goes, where abouts (on the tongue) is that sourness most noticeable?

96deg is a little better.. its best to try it with straight espresso though.. not my everyday drink but I enjoy it at times.. I must do another straight espresso when my Honduran (it smelt fantastic as it was roasting) is degassed and see how it comes up...

Thanks Marc. I think Ill have to try a straight espresso at the factory temp, and then Ill work on increasing the temp and trying again. Trial and error!

I think I have the same problem too... I use the same beans as the guy at work uses (he sells me his stuff) and the coffee I get out of my 6910 is nowhere near what his one tastes like... which has been frustrating the hell out of me. I have played around with the dose, ground, tamp for months now but nowhere near still. I think it is the temp that I will have to play with next. I hope this is it!
I asked him today and he said that it is set to 92deg on his machine so might try that on the Sunbeam when I get home and see if that makes any difference. Whew... at last a glimmer of hope!! :-)

javaboy, it may come as a surprise but I have been able to replicate flavour profiles of coffee on my 6910 which are almost identical on a commercial LaMarzocco and synesso as well as a number of HX machines.

Admittedly it is not as consistent on the 6910, but promising none the less.

I have found that water quality really does affect flavour profiles of coffee not to mention cleanliness etc.

For the record, I am brewing at 94 degrees

Christretto, thanks that is comforting to know indeed. I cant wait to go home and crank it up now to see what difference it makes. I will try 94 first up. thank you.

Javaboy, this coffee game, and getting coffee tasting great can be challenge! (That has been my experience, at times). I have checked the sunbeam manual and the factory temp is 92 degrees.

Christretto, how to you attempt to obtain water quality? I use a Brita water filler jug, and then pour that water into the water tank.

I will take MarcS advised and Christrettos and try an espresso at 92, then 94 and maybe at 96. I need to also develop my taste with espresso and determining if it sour/ bitter or not!

Water quality is another whole different topic... I keep my water constant by using a bottled water ran through a brita filter, that works for me.

Christop, different beans / blends / roasts perform differently at differing temps. Experiment and see what is right for you!

Just remember that cleanliness is critical to obtain full flavours and profiles.

When pulling shots at different temps, give yourself a few days at each temp to establish what is best for you.

Thanks Christretto. I will experiment with my current home roasted beans, at a few different temps

I do work on continually keeping my machine clean. I purge the group head pre and post pouring a shot, also purging and wiping the steam wand pre and post use. I also do the factory clean, with the blind disc and without the table - weekly.

I will need to drink some more espresso, keep it at a certain temp for a few shots and then increasing. Thanks
