  • New Silvia machine - too fast?

    Hi all,

    I just recently bought a new Rancilio Silvia & Rocky combo. The past few days Ive been playing around with the grinder settings but I find that unless I grind so fine that little bits of grind actually end up in the cup after brewing the shot always seems to pour too fast.

    I read somewhere that when you time 25 seconds you should get around 60-100ml with the PF attached but no coffee. I get around 250ml - should I be worried?

    Btw, this is my first post.....though Ive been reading this forum for months. Lots of great info to be learned here!

    Hi Griffster and welcome to Coffee Snobs.

    The generic instructions that I followed when setting up my new Silvia said 60-100ml in 10 seconds, and my machine came within this range.

    The grind setting for my Rocky to get 25sec, 60ml pours, is generally in the range of 7-9 depending on the beans, but I believe other members Rockys vary a bit from this.

      Thanks Alan.... and youre right. I read it wrong and after rereading the article it seems that my Silvia pours 100ml in 10 seconds. By altering the OPV would I be able to slow the flow rate?

      Also, I bought a LM single basket from Veneziano and I find that unless I dose 11 grams or so of coffee into the basket the puck comes out quite wet with a pool of water on top. What would be the suggested way of fixing this problem?

        Hi, Griffster -

        First, I think it is quite likely that your OPV is set just fine (or at least "close enough"). Unless you have a means of actually measuring the pressure, I would not suggest making any adjustments.

        Secondly, I would suggest that you stick with making doubles (around 15g coffee, 60ml in the cup, 25 second pours) until you start to get consistent results. Singles are much more difficult to make.

        Thirdly, if you use freshly roasted beans (no more than 2 weeks post-roast), you should be able to dial in your Rocky to get a 60ml pour in 25 seconds. It will be very difficult to get good results from stale beans.

        Finally, make sure your puck preparation is up to snuff. This includes a good distribution of loose coffee in the basket, "declumping" if necessary by stirring with a pointy-thingy, and a nice level, even tamp. (If you do not already have a replacement for the small plastic tamper that came with your machine, then please consider one of Greg Pullmans outstanding tampers).

        Good luck -- and stay away from that OPV until you have the other aspects under control

          Thanks for the advice.... Ill try and keep my hands away from the adjustable wrench! ;-)

          I usually only make 1 cup of coffee at a time so I didnt really want to keep throwing a shot away each time which is why I wanted to get by using the single basket even though the doubles are apparently much less of a headache.

          Ive already got 2 tampers.... an Espro and a coffeelabs so I doubt Ill need a third. Ill try and get some fresh coffee within the next few days to see if that makes a difference. Thanks again!

            If you dont like to drink Doubles, just collect the other half of the shot in a separate glass and then tip into a container kept in the fridge for later use making superb ice-coffees. In a couple of words, absolutely magic ice-coffee...... 8-) ;D

              The other option is to drink ristrettos--aim for 20-30 ml of coffee from a double basket in the 25 second range.

                Thanks for all the replies! Ill wait till I get a fresh bag of beans before trying again and see how everything turns out.

                I may try the ristretto from the double basket but Ive got a feeling it may be a little too strong! ;-)
