If temp surfing/cooling flush is not your thing. I'd advise against going Sylvia.
A few years ago when the Breville DB was on sale ($6xx), there was an influx of Sylvias listed on the hardware for sale.

Eureka Mignon Manuale $469, quiet, small footprint, new model, anticlumping feature, not to messy when grinding.
less features than the sette.
The Silenzio at $599 is closer to the 270wi in features.
your best bet is to go and try the ones you like out at your local stockist.

Thanks for the input - we are now leaning towards Lelit Victoria and Baratza Sette 270wi after comments and further reasearch.
Ive seen the 'history of reliability issues' with the grinder and also seen people refute that saying that yes it was true, but newer models no longer have this issue. What are some other grinder options we should consider?

Personally owning the Rancilio Silvia, id discount the silvia/rocky combination only due to the quality of the rocky grinder and the large variation in high/low temperatures of the silvia. your consistency would definitely not be there. Tthe issue you will end up having is that your espresso will only be as good as the grinder you are using, and the rocky isnt a great grinder at all.
The baratza sette grinders are incredibly loud and have the potential to wake a house, and they have had a history of reliability issues
as others have said, out of those options, the dynamic duo is probably the best.

Definitely the Breville dynamic duo out of those options then.
For you stated aims of ease of use and repeatability at that price point, including the need to steam, the Breville Dual Boiler can’t be beaten.
Given your criteria, I’d totally discount the Sylvia FWIW.

Lelit Anna - PL41TEMD would be the direct equivalent to the Sylvia but with a PID. Could also look at their other machines further up the range like the Elizabeth or Mara, but probably out of budget if looking at a Bambino.
Heat up is similar to the Sylvia, about 15 minutes to fully heat up.

We both have Lattes with alternative milk (Oat/soy/almond). Would like to swap to espresso, but find it too bitter at the moment. Hoping the upgraded set up will improve the espresso to cut out the milk.

By dairy free do you mean you only drink black coffees, or do you mean you drink alternative mylks with white coffees? (Would just change the recommendation significantly)

Upgrade time - Advice Breville vs Rancilio
Our 5 year old entry level Breville is on the way out so I am in research mode. Mothers day sales isn't a bad time to buy either.
Choices:
Breville Bambino Plus + Baratza Sette 270 Grinder
Breville Dynamic Duo Coffee Machine and Grinder
Rancilio Silvia & Rocky Grinder Bundle
We use good beans from a local roaster (Revolution Roasters)
We are dairy free
Prefer as easy and consistant as possible
Looking for recommendations or options we may have overlooked.
