Thanks for your help. I finally invested in some scales to 0.1g and am setting about perfecting it. I've been using the double basket as wasn't happy with the single. Hopefully the scales will help.

Whilst I'm not saying what I do is the only way to setup, but I do get back to back repeatable shots that are consistent ( when the daughter / S. i L. are over) and I can make changes and know what the result will be. Which is the espresso std of having control over your setup.
IMO you require these as non negotiable's.....
Good fresh beans - say from Andy here - That are a good roast And is reputable in that claim as fresh.
Beans Stored and kept fresh.
Scales to 0.1gm .
A matched tamper.
A very good stepless grinder - 64mm flat blade class or above.
Assess you dose so that it is near maximum dose And sets up clear of the showerscreen, aka 5 cent test.
Time and weigh your shot out AS the flow rate is very important for the taste outcome.
i.e. my Synesso 7-9gm basket allows me to setup dose at 11.3gm with a heavy tamp, clear and under the shower screen
Now these are the very very non negotiable's.....
Be very very consistent.
Be Patient.
Trial and error are the go here. Sneek up on the final setup recipe step by step.
Remember I said earlier one change can be noticed in how the shot behaves?
And log down everything till you get close to the ball park.
Taste is the first and final arbiter.

Breville Barista Pro single cup shot
I’ve had my Barista Pro for 4 days now. I’m struggling to get a decent shot out of the single filter basket and single shot setting, but the double is great.
I’m keen to hear from anyone who has perfected the single shot.
