On this image that is attached you can find there are three black wires. 1 goes to the power cord. 2 goes to the grinder. 3 is just hanging in there.
Just checked an 870 that is on the bench. From your diagram:

Wire 1 goes to neutral in.
Wire 2 goes to grinder black wire
Wire 3 goes to thermocoil thermostat black wire

I compared that to an 860, the thermocoil neutral wire is blue and is connected along with the neutrals for the pump and solenoids. I don't know what differences on a board level they made between the 860 and 870 for this. The 860 I'm looking at is very old, if you had a late model 860 they may have already changed some wire colours or connections.

I don't see how any of this would stop your grinder from working though.

You are an absolute legend! Thank you for that information. I don't know how old my machine is but it was bought brand new from Australia in 2012. It would be a bit difficult for me to specify the exact date of purchase but I can't find any information on the unit that states it's manufacturing year and month and so on. Is there a way?

So with the info you've given me, is there another wire for the thermocoil on the 870 then, such a wire for the thermostat that the 860 doesn't have? Because on my unit it has no where to connect, since my thermocoil works fine the way I connected everything, it's heating up as it should. I'm starting to wonder if the grinder needs to have ground via the backplate of the PCB housing since there is a ground wire going from it's metal backplate to the common grounding point on the machine? And if I might have issues there and it not touching/making contact enough. Why I mention this is because the new housing for the PCB I got with the card is not really a secure fit, only when I screw it in it's secured. Need to have a look at that and my cable management I guess (sorry for just rambling on here).

Okey...okey...I've had a breakthrough! I've mended my machine and just pulled a shot, something I haven't been able to do in about 2 years. I'm so excited to be drinking an espresso at midnight (my local time). Haha!

So here's the solution to my problems I've been facing:
The white wire to the grinder I thought had a good connection, turns out I had a hunch it wasn't all that great so I re-terminated it. I also fixed a naked ground wire (put some shrinking tube over it) and made sure the connection was good. I also cable managed everything so it was snug behind the PCB tray.

Now my machine is fixed and I'm as happy as can be.

Hope this will help someone else that has an PCB issue.

        Cheers
