Dont hesitate just do it. Ive just installed a PID on my gaggia and wish Id done it sooner. At under $40 for a PID and SSR from the bay (in usa) it is a pretty small investment. You wont regret it.

I tested my urn (5 litre Birko) and found that the temp varied up to 15 degrees from where it is set. I put it on 80 degrees and find it turn on at 82 and off at 97.
Worse still these numbers change as the urn heats up or down. At cold the urn turns off at 90 and on at 75.
Not the best thing to hear if you are using an urn for cupping.
So a PID will lock down the temp far better. Got to build me one of those things.

you could use one of these Temp controllers on the bay
says good to 99
i use one on my temp controlled fermentor fridge (beer making) and happily switches 10amp
they have a cheap plastic temp senor but, not sure if you could switch it to a SS k type easy

Closer tolerance (still only +/- 1 degree if you use a K type TC) and easier repeatability with a PID/SSR combo. To get it more accurate you would need to go to a better quality TC.
Usual things too play carefully with high voltage it kills the tinkerers and the "experts" alike

PID a Hot water urn ??
I noticed Seven Seeds had a PID on their hot water urn and I have an 8 litre stainless urn and wondered if it was worth doing for cupping or larger pour over sessions.
My question is what benefit would I be getting over just turning the temp dial to 95 or whatever temp I was after? I guess for pour over most kettles with a temp dial would keep up (1.7L at 160ml cups) so that would just leave a cupping session of say 4 people and 200ml cups. I think I have answered my own question, probably best suited for bigger numbers of people and coffees?
