    You said
"And look, for my own private enjoyment I always use the deep double (18 grams nominal), drink one and turf the other of the two resulting espressos. "

Suggest you try using the 30 or so ml from both baskets.
You will get the guts of the 18 or so grams into one cup. Either straight or topped with the cow, I think it is the best way of enjoying the espresso.

    My 18 grams worth.

      GR8WINEANDCOFFEE,
Yep, my previous packs did not have enough coffee in them. I was under packing. I would run the water through for 20-25 seconds and get nearly a full cup, about 180-200 ml. Since adjusting the pack as per FreshCoffees advice, today I got closer to 60ml. Rich black juice, and maybe 3-5mm of a creamy layer. Got really excited, but couldnt reproduce it. Pucks are much better, as in firmer, but still "wet" on top. Have taken to pack and test for imprint then pour.

I assume for two cups, one each side, I only want about 30ml in each?

      Thanks gurus!!

Another thing to consider is the freshness of the roasted coffee.
Not sure what coffee you are using.
If you are not roasting yourself then be wary of beans with a use by date????
Better coffees put a roast or pack date on the bags. Then you have a couple of weeks to use it.
If the coffee used is stale you will get similar result to a coarse grind.
Aim for 25-30 ml in 25-30 seconds. If it takes a bit longer do not worry. If it takes longer, check the filter basket after removing the puck. If it has an oily stain then your have over extracted.
You are better to have a slightly coarser grind than a grind that is tooooo fine.
However, remember the 25-30 rule is ONLY, I REPEAT ONLY A GUIDE. Shock, horror, many might say, but I have had 40-50 second extractions and thoroughly every ml of the heavenly thick brew. Absolutley no burnt aroma or taste.
Sorry have to get back to my Pinot from Bellarine Penninsular.

          Hi Ricster

Not sure if this is still a problem for you or not, but just wondering if you have the lid on the reservior the right way round? You get lots of condensation happening under there and if you dont have the cut out bit under the lid in the right position the water tends to drip down the hoses and back into the the machine.

          Hope this helps

            Hi Micstone,

I took my machine back to Moccopan here in Sydney last week & the problem was discovered. The drip tray was under size by about 3 to 4mm, the technician there was very surprised as he had not seen it before. He changed the drip tray for a new one & no more water mess. I have to say that the people there were great, apart from fixing my problem he ran through other helpful ideas & tips on the machine with me for about an hour.
So now I am happy & as of yesterday I have been able to open & try my rocky grinder (doserless) it was a present & sat in the box at home for a month.

Thanks everybody for their advice, Ricster

              Hello Ricster,

I realise you wrote this a while ago, but..

I just bought mine.  I bought it from a local shop, hoping that I can go there with any future question/problem.  Now I am starting to think the guy is not that knowledgeable, from some of the things hes said.  So, I wonder, did you buy your from Moccopan?  I believe they do the servicing for all Rancilios, (I actually could have gotten a better price from them  ) so I just wondered if I would be better off dealing directly with them, should I have a problem? I just wondered if they would be that helpful if I didnt buy from them?
