  • Silvia Newbie Questions

    Hi Everyone

    I have read the forums for a while and used the information gained to purchase my first coffee machine (a Silvia/Rocky combo). Though, I have some operational issues which Im sure someone will be able to answer quickly and easily:

    1. The Water Resevoir has two plastic tubes going into it. Are both tubes supposed to be in the water (as the diagram with the operation manual only has one tube!)?

    2. When i tried to use the machine last night, I used the double cup basket and put as much coffee as I could fit in the filter in it (and tamped it down). However, when i tried to fit it in the machine, the filter wouldnt click into place as there was too much coffee in the basket. I then had to remove some coffee so the filter would fit in the machine. Therefore, what is the optimal amount of coffee to put in the basket? How do others measure what coffee amounts to put in the filter?

    3. What size stainless steel tamper should I get to perfectly fit the Silvia basket?

    Someone will probably beat me to this post but,

    1. Yes, both tubes should be in the water. One is a return line from the over pressure valve.

    2. Tamp to the line around the inner surface of the basket. When you get it right the portafiller should lock in with a little bit of force required to turn it. Not monkey-wrenching force, but more than for an empty portafiller. You should get an impression of the shower screen and screw head on the puck.

    3. Best to get a custom made one. Look up Pullman tampers. The standard s.steel tampsers are a little undersize (which mine is). A proper fitting tamper makes like easier.

      Hi Marxman,

      Not much I can add to Matts comments, except maybe;

      filling basket -
      I grind directly into the basket, tap it a few times before its full to help settle grinds, and then slightly overfill, but its not level yet, then I use back of the blade of a kitchen knife to tap the basket and level off the grinds making sure its as even as possible all around the edges, and usually leave a just small amount of loose grinds accross the top.

      Tamping -
      The nominal size is 58mm if you want to get a cheaper tamper. I dont know how much better a custom made one is, I just make do with a standard 58mm Stainless Steel one from coffee parts, (it is much better than the original plastic thingy).

      Tamp with moderate force, tap the sides to loose grinds from the sides, then tamp to about 30 pounds force which should get the top of the coffee close to the groove in the basket...

      When you fit the portafilter into Silvia you should feel slight resistance from the coffee in the basket just touching the showescreen.

      If you have too much coffee in the basket it will probably pour too slow, depending on grind, and might leak over the top as well. If you have too little coffee it will pour too fast and the shot will be weak and watery.

        My suggestion would be get the non Silvia filter baskets for the portafiller to start with. The original baskets are not up to commercial standards, IMO.

        And when you tamp and then tap, make sure you tap the portafiller with the handle of the tamper, not the tampers face. Once that beautiful smooth surface is marred with dents, youll not get a good polish on the surface of your coffee cake.

        Also, you want to count to 5 (I count 1000, 2000 etc) before you see any coffee pouring from the spout after switching the switch to on. Your pour should start with the nice thin "mouse tails" and then start to look a bit "gluggy" for want of a better word as the beautiful treacly crema starts to come out as well. If you dont see that, then go back to Matts and Bullits posts to troubleshoot!

        If the above is too much coffee jargon, please let me know! And Ill explain further.

          The coffee i tried last night was pre-round and the water came out of the coffee almost immediately. I assume that means that the grind was too coarse?

          So, based on my reading, it should take about 30 seconds for thirty mils of coffee.

          Where do I get non-Silvia filter baskets from?

              Yes, could possibly too coarse, especially if you have filled the filter properly.

              And you should be able to source the other baskets from Coffee Parts. My machine came with the other baskets, so Im not 100 percent sure. You could try Talk Coffee as well. I think.

                Try coffeeparts http://www.coffeeparts.com/mar/mar1.html part 521830 single and 521994 (deep double). The LaMarzocco (30048 and 30013) equivalents have contoured sides and are fun but may not be suitable for standard 58mm tampers...

                Best also to lose the pre-ground coffee and save for a Rocky doserless as you will struggle with flow rates if you cannot customise grind. Attilio- Fresh_Coffee of Cosmorex and we- (Chris of Talk Coffee) can each supply the rocky...

                  I agree with Scooter gal, try first with the orginal basket before you go into commercial once.

                  If is running to quickly the coffee must be to coarse, you are welcome to come to my shop if you are in Bondi Junction I will try to help you as much that i can.

                    I had the same issue with my botticelli (slightly higher specced but basically a silvia) with the filter baskets- I tried the 7 g single and 14 g double from my works isomac in the botticelli and the espressos were noticeably richer
                    I looked closely and my guess is that the botticelli baskets are 6g and 12g
                    I got 18g and 14 g from coffeeparts (had to use a diff portafilter for the 18g)

                        Matt- Id suggest that you do.....perhaps at least a deeper double..You will get much richer shots...

                          Matt,

                          I dont think it is necessary just yet for someone new to the machine. However if you can get one for the right price when you order it then it would be worth your while having it on hand . I dont have one, but it will be on my wish list for Xmas. It apparently does make a difference to the quality of the brew as it holds a bit more coffee and the profile is better. But, if you dont get one then I dont think you will miss it. The standard double can make a fine cup, and when you have mastered it, then you will naturally want to experiment.

                          I found that having a standard set-up made it easier at the beginning to compare my results with others who have the same set-up.

                            Marxman, what ever you do, ditch the pre-ground coffee. You have a Rocky, make him work !!!!!!!!!!!!! Go out tomorrow, and find a coffee roaster to buy some fresh beans with, and never go back to pre-ground.

                              Hmmm, dont know about that. The deeper baskets allow you to grind slightly coarser for the same duration shot and as a result, it is a bit easier to control the consistency of dosing and therefore, the shot quality consistency from one shot to the next.

                              Yep, sure does, the shots are both richer and sweeter.
