Cheers.Not sure how you guys go about it in a cafe environment, but I free run some water through each group into my handles every hour, and by midday I backflush water and scour the insides of my pfs as well as baskets, just to keep them clean. Not only that, but the same at the end of the shift and allowing the pf heads to soak in a small container of water each night. =P
