Google the "Schectermatic". Its a little paper cone, for which a template can be downloaded, to suit Mazzer dosers. Of course you can make your own, but I thought the template was a good idea.

I have a Mazzer SJ and I have found that by starting the group handle at 1.00pm and the rotating in an anticlockwise direction as the grind disperses into the handle reduces, although never eliminates grind mess, If you look at coffee shops that are running flat out the grind mess is a mound, so I dont think it can be alleviated completely.

Or get a Kyocera handmill, the bottom catcher fits inside a portafilter (mines 48mm), upend it into the portafilter, remove and tamp. No mess!
I also use the corner of my kitchen sink for tamping, the little edge part. Use that as a tamping station then wipe off with kitchen sponge the odd little grain or two that strays. Mostly the strays fall into the sink so I dont have to do anything with them... ;D My knock box is a double walled stainless steel cup I bought at Vinnies for $2. Works a treat and I can fit 5 pucks in it.

I use a dosing funnel made by Orphan espresso in the US, expensive for what they are but certainly keep things a lot tidier.

I tried a wide nozzeled plastic funnel pre BCG800 which is pretty much keeping everything clean on its own

Other people would probably suggest things like Yoghurt containers and paper-funnels to aid you in your quest
For example, I use a plastic cup. Which Ive cut the bottom off, just below where you hold it. It fits tightly into the portafilter, and fits under the grinder spout.

Coffee grind mess
So I have a little cafe roma, and I havent yet upgraded to a electric grinder. I have a nice vintage hand grinder which works well for a coarse grind for my dual walled double shot filter.
My question is what techniques/ideas do other CSs out there have to prevent coffee grinds going all over the bench while i dose up the basket?
I know it seems like a trivial thing, but I dont get a dedicated spot for my coffee preperation (not my choice/kitchen :
) so tamper mats etc are not really going to work. Im currently wiping down the bench after every dose but if someone has some ideas so as to help this out, would be great!
