    Dont know that machine at all..... but most commercials are pretty similar -

    Firstly there should be a sight glass somewhere on the front - this shows the boiler water level (normally a little floating ball inside a tube). This will have min and max on it or next to it. The level should be between those marks. If the auto fill detector has been affected by scale the boiler could be too full and high water level can cause water in the steam.

    There should also be two gauges (well on most machines) one is for brew pressure - will go to about 9 on the scale whilst brewing - the other which you need to look at is boiler pressure - this will generally be at about 1 (could be as high as 1.5) if the boiler is working properly and has a full head of steam.

    If these are both correct then the other possibility is you are not opening the steam valve far enough - basically commercial machines like it fully open - you will get a fair bit of water initially (point wand at drip tray) and then you should have a strong, powerful blast of steam (which some might think is too strong for texturing milk - but it isnt and thats how they like to run (and how they texture milk best).... mine shoots steam from a 4 hole tip over a metre!!!

    If the wand isnt open far enough you can get a gentle steam flow - often mixed with water as the valve, pipes etc havent been purged of water and with low steam flow you will also get condensation. Commercial machines like to work hard and fast!

    Hi all.

    My church has a Conti Xeos 3 group machine and it is making a lot of water when the steam is switched on. Initially there is a bit of water coming out of the steam tip, then it clears, but then every few seconds it goes really wet again for a second or two, then dry again for a few seconds, then wet again. It just seems to do this continually. I cant get dry steam out of it for any length of time.

    Also the machine is 4-5 years old and probably gets used a couple of times during the week (for a couple of hours each time) and then gets used solidly on the weekend.


    Thoughts anyone?
