    Hmmm, not super familiar with the Various but it should be capable of grinding fine enough. One thing I do fine with the pro is you have to make sure the grinds have been evenly distributed. I use a toothpick to stir the grounds so the are all clump free.

    The best coffees I have ever had are from the pro. It's truely wonderful.

    Thanks! Only 2 days into it and already improved a lot with the steam. I'm reading about people removing the teflon tube inside the steam wand for even less condensation which sounds like an idea. I don't care if the wand isn't cool-touch. Happy tweaking away.

    Only confusing thing for me is that my little Vario is on its finest grind setting now and still the coffee runs a little fast! May have to look at my roast settings, as I'm not sure how else to slow my shot...

    Also I bought two VST baskets, a 15g and an 18 g. I found the 15g always left imprints of the shower screen on the puck - I was over dosing, but couldn't quite get a good pour with less than 16g.

    As for the 4 hole steam tip vs 1 hole (I had a single hole on the Pavoni) it's different. There is a lot more steam from the 4 hole, so it's slightly less forgiving as it happens so fast. Don't forget to purge the steam longer as the no burn steam wand means there is usually a lot more excess water. Once you get a good swirling technique it's much easier to get good micro foam than a little machine like an Elektra/Pavoni.

Only went bigger to be able to leave on all day, not worry about running out of water in the boiler, and have a water outlet for long black and teas. The VST is certainly worth trying for the price, and I don't expect to have my technique down this early on with the machine in any case.     Sounds to me like you've got an ideal combo going on there mate.
    Why change?
    I guess making changes to how you do things can reveal improvements (and disappointments too) so long as you don't lose track of what you're trying to achieve...

    I like VST baskets, many here don’t. Unfortunately I think it’s trial and (hopefully not) error. Fortunately portafilter baskets are a very small percentage of a machine’s overall cost.

    I am the opposite to Yelta. I have the Profitec baskets and switched to an 18g VST basket - although I only dose to 16 g. I found the VST baskets get a more even extraction.

    Have never used nor owned a triple Arcade, I progressed from the original 14 gram Rancilio to an 18 gram EP, dosed to 18 grams, suits my taste well.

    Made a brief excursion into VST territory a few years back, they didn't suit me so still use the EP with tapered sides.

    Better than the triple. Not as strong (in a good way), and yet the flavour is more complex and lingers longer.

    To be honest it's a massive taste change to the old machine that I'm still trying to come to terms with. I'm pulling my shot short too just to keep it to 30ml (about the same volume my Elektra gave me).

    I'm only about 6 coffees in with the new machine so expect a lot more changes throughout this week.

    Just experimenting with my new machine with 58mm basket. It came with a flat, triple (21g) basket, and a tapered (cone) double (14g) and single (7g). Coming from a 49mm machine, I found the triple just too strong for me at the moment.

    With the double, my older e61 double basket was shallow and flat. On the Profitec, it's deeper but tapered like most singles are.

    I would have thought that a non-tapered would be better for a more direct flow path, should I look out for an aftermarket flat ~14g basket to try or are there benefits to the cone shape? If it makes any difference, my tamper is a c-flat shape so somewhat suited to a tapered base section.....
