In terms of temp stability, PID makes all the difference on Silvia

I've got a Silvia v3 (surfing, non PID) and a HX Rocket Giotto (also without a PID). For mine, I don't notice temp instability with the Giotto, plus it is far more forgiving with fine grinds that would choke the Silvia. I also find the Rocket is just a more pleasurable user experience.

Depends if you drink a lot of milk drinks. HX has steam for days compared to the Silvia. E61 group HX machines are pretty stable, a group head thermometer would be all you need as an indicator of when to brew. If you're drinking espressos, stick to the Silvia

Single boiler with PID vs Heat exchange.

Hi, I'm currently using a Sivia with PID but I've got an itch to purchase a heat exchange machine. Should I move to a heat exchange machine or stick with the Silvia? I'm about the water temperature instability of a heat exchange machine.
