A Dual Boiler (with controllable Brew Water Temperature) combined with an E-61 Group system and all that entails, seems like a mismatch of engineering to me. Ill probably get shot down for saying so but if youre after a dual boiler machine to take advantage of controllable Brew Water temperature, then Id steer away from machines that combine this with an E-61 Group system.
The E-61 Group (and variations there-of) have been designed originally to work with HX system designs that incorporate a Thermosyphon such that the Group will maintain an inter-shot temperature stability usually only requiring a short flush to bring the Group to an ideal brew temperature. Intra-shot stability (a train of consecutive shots) is then determined by the thermodynamics of the overall design of the machine which one would hope, maintains the brew water temperature within narrow tolerances.
A Dual Boiler machine though, one would buy one of these presumably for their ability to be "dialled-in" to suit pretty well the ideal brew water temperature to suit a wide range of bean types and environmental conditions. Because the intent of the design of the E-61 Group was to maintain brew water temperature stability within a commercial environment, it is not as well suited to the situation where one has a need to tailor the brew water temperature to optimise a preferred flavour profile from a range of bean varieties. Or even for the same bean variety as environmental conditions change throughout the day; much in the same way as one minutely adjusts the grind setting.
It might pay to look at alternative Dual Boiler machine designs, especially where a manufacturer has specialised in this design for quite some time. I havent had the opportunity to actually work with a wide range of machines, given that I am not a professional barista but I am sure that some of our "pros" will be able to throw their commercial experience into the mix and give you a better idea of what to expect. Its technically doable on almost any machine.
We can most likely assist with a conversion of any of our HX or dual boiler machines.

Looking at the diagrams of the Giotto, Bezzera Domus and Isomac Tea it is not possible to change the steam arm from the left to the right. The reason been is that the steam pipes are coming from the top of the boiler and the water comes from the bottom right site of the boiler.
The only way I can think right now is by asking any of the importers if they can get it specially for you

Hi everyone.
I am looking to upgrade Miss Sylvia hopefully to a dual boiler, E61 machine. But where the machine HAS to fit is almost against a kitchen cabinet to its left. We do a lot of milk drinks. Sylvias steam/hot water wand is to the right which gives me the access I require. It seem all the E61 machines have the hot water wand to the right and the steam wand to the left. This will not work in our kitchen. The hot water can be to the left (as we use it so rarely) but the steaming wand must be to the right.
Does anyone know the reason for E61 machinesall being configured this way?
Can anyone point me in the direction of a machine which would suite us?
If not does anyone know of such a dual boiler E61 machine that can easily be modded for the configuation I need?
