With regards to you problem i would be looking at the Control Box (Brain) for two reasons. 1 is that the pressure stat works, then doesnt, this could be faulty as previous users have stated but the pressure stat not working, has nothing to do with the pump which works regardless of wether the unit is hot or not. 2 is that i have had some new control boxes, that have a fault from new!
The only other thing that you may want to check is the water level probe in the tank not the boiler because if the probe in the tank reads no water, then it shuts off the pump..

My machine is Fracino and I am not privy to Giotto. In general if the pressurestat is not expensive (not like Parker or Sirai for example), a Mater or Ceme could be had relatively cheap, I would replace it. If it were Sirai or Parker I would replace the membrane.
The solenoids can be a trouble given the age of the machine. They might need descaling/cleaning. Once you have everything clean, then you can start sourcing the problem. From my personal experience, I was dealing with an old Bezzera and I had lots of problems, the pump would not start, etc. it came down to scaled level probes. PeteF insisted from the very beginning to look for simple solutions, i.e. scale, before jumping to the electronics. Once you do this you will know your machine inside-out.
As you stated, the swap of the control box with new one, did not resolve the issue.

open her up and have a look. You should be able to see scale on all the plumbing connections.
I posted a long write up with pics of when i stripped and cleaned my giotto premium. Also changed some parts.
Have a look at it for some help.
Another probe to clean is the one the water tank sits on. Give it a good clean also.
As mentioned by 2mcm, put the new board in. See if that helps, if not, then you can eliminate one thing and you have a spare board.
Descale the machine, clean everything, change the cheaper parts, like pressurestat and anti vac valve and try again.

Did the same thing. On start up always pumps fine until it drops out of the green zone then when I flip the lever no pumping.
2mcm whats the best way to check for scale buildup?

I think the pump solenoid *could* be failing as well....
Assuming that the pump is operating normally, I suggest you use the new board and replace the pressurestat too. If no success, replace the pump solenoid.
Is there significant scale?

Does it look as it needs descaling? Sometimes the level probes can play tricky games sending wrong signals. If they are scaled upon heating they can mislead the control box and the pump will stay quiet.
