Im looking at a 2nd hand bezzera bz40e. This needs to be plumbed in but Im in a rental property so cant do this. I assume i could run a drain pipe to the sink and have a reservoir tank next to the machine for it to fill up?

yes you can, and pretty easy to do
is it rotary pump? if yes you need to consider keeping the "pump" wet. as IMO they are not designed to self prime.
you may also need to adjust the pump pressure using a group head gauge.
this is my machine when in "rental" mode, i am now back in my own home again and have plumbed, if you can sneak the hose out from under the sink and to the machine somewhere you could plumb in , in a rental
drain hose across the bench to sink works fine
althought here i just used a small tupperware container to drain into...

Thanks for the advice. Yes I think it is a rotary pump model - so by keeping pump wet you mean ensuring that the reservoir does not run dry? By putting the tank on top of the machine like that it would give some head pressure to the pump system (which would help keep the water supply flowing into the pump more like a plumbed in setup).
