Here is the shot that u made thus morning with the Strega. I used 18 grams of coffee for this shot
I let the pump runs for ~8 secs and stop the pump but hand on to the lever for ~2-3 secs for preinfusion and then I let go of the lever. If the flow is a bit quick, I just pull on the lever to slow it down. That shot tasted sweet, smooth, medium body but not much acid
I dont know exactly what it is about it, but I could listen to that sound (of trickling crema) all day long! It is of course just one of the delights of lever ownership, but not one to be taken lightly! 8-)
