Does the coffee taste burnt or overly bitter when it reads 100c? if not I'd say what the thermometer indicates might be inaccurate.

It's very steady at present and the machine's been on 3 hours: 1140hrs 95.7C

1325 Flushed a 100ml out, started rising to 99.7 within a minute, then 105 after a couple of minutes, 107 after 5 mins, 10 mins and showing 113.1.
1340 Flushed another 100ml out temp immediately dropped from 113.2
to 101.5 with lots of steam and hissing before flowing.
1350 98.8
1400 97.6
1405 96.8
1415 97.2
1425 97.8 short flush, no steam, pulled shot, it was slightly bitter, but drinkable. Probably should have waited a bit longer. This was with the 1 cup basket and I've been getting excellent shots from the 2 cup basket, just
good shots from the 1 cup. The temp shown is supposedly 3 degrees above what enter the puck, so the temp should be somewhere around the 93 to 94 brewing temp

Rightio then...
It looks like the temperature being reported by the dial thermometer is correct.
That being the case, there is either an issue with the PressureStat or the line feeding the p/stat is being temporarily blocked by scale or some other detritus of unknown origin.
If the machine is brand new, I would suggest getting it back to the Vendor from whom you bought it and direct them to read this thread as a primer for troubleshooting and rectifying the problem, whatever it turns out to be...

Went to the dealer today and they loaned me their scace to check the temps myself.
Sensor start temp 96.5
sensor Scase
98.4 90.3
98.4 94.1
97.6 96.2
96.0 95.5
93.6 93.5

The scase was well warmed up and drew 350ml of water and started the reading after about 5 seconds. The sensor looks quite accurate Noting wrong with the machine or sensor. the dealer thinks the same as Dimal, possible a blockage that's cleared itself. Basically it's working normally, keep your eye on it and bring it back if it presents any problems. Plus points to Ronin for accurately assessing the machine's behavior was normal. So, panic over. many thanks to all involved
