Bled any potential air from the top nut, no improvement.
Here is another video showing the pressure reading with no portafilter fitted, followed by a blind basket fitted. I should not be getting 4+ bar with no basket in place to create the pressure right? Does this indicate a blockage somewhere else in the system that is creating a narrow water path therefore an initial pressure spike?
Yeh, definitely shouldn't go above without a puck/blind basket in the way. Is it possible something got in via the water tank, then into the lines or while you took it apart? My friend used to keep use one of those Aquagusto filters in his tank and the residue made its way into the lines causing pressure issues in his steam wand. Not sure if that helps but might be something to look in to.

So I had the mushroom off to check for any scale last night but everything seemed fairly clear. Happy with that.
I disassembled and reassembled the brew/cam lever, everything was in the right place. I did notice there was some play in it so that the activation of the brew lever on the pump switch was slightly inconsistent, but nothing major. Tightened it all back up but still have the same issue.
I will look into the air in the system problem, didn't know that was a thing! Thanks again.
Just thought of one more common problem which is very likely cause. You have some air in your system. Loosen the top bolt on your E61 (enough for a trickle of water to run out) run some water through for 20 seconds the re-tighten and test.
Have you recently pulled apart the E61 group or lubed the cam lever?
I had the mechanism apart ~6 weeks ago to lube the cam lever after a backflush. Everything has been fine since then up until the weekend. But good thinking, I'll check to make sure the cam lobe hasn't come loose and worked its way into the wrong position (if that is possible).
Hi all, had trouble in the last few days with shots running really fast and thin.
Started troubleshooting today, seems the coffee puck is being blasted with water as soon as I activate the brew lever, disrupting the bed and leading to the bad coffee.
The OPV is set to 8.5/9 Bar and it seems to reach this at the peak. The issue seems to be the pressure ramps up really fast, then some pressure is retained (according to the gauge) even after the lever is switched off and excess water is dumped to the tray.
The lever is also no longer resting at the mid-point allowing flow with no pressure, as soon as it reaches the mid-point the pressure shoots up.
At this point my assumption is there's a problem with the OPV, the lever mechanism or the pump microswitch but I'm unsure how to troubleshoot further. I've already run a backflush** (not descale as originally written) cycle in case there was some kind of build up of oils causing the issue but nothing has changed.
The uploader won't let me attach the video, here's an imgur link: https://imgur.com/a/fqRSEME. The video shows the unusual behaviour of the brew lever and the corresponding pressure readings.
