    Higher volumes may well work.
    Just to clarify my comments I was sticking with 2:1 ratio so for 18g I would still aim for 36g out but getting that over a longer time duration ie the 50 - 60sec. I was not meaning to suggest greater volume
    The finer grind and longer shot time extracts more from the coffee.
    At times when I change coffee and have ground a little too fine I get longer extraction times and stronger shots so I am basing my advice on my own observations. A few ideas to play with, the Pro is so much fun to use any excuse for pulling shots is good news 😊

    Agree with Beanz's response.
    The 5c test will help assess just how high the 18g dose sits in relation to the maximum dose available for your basket.

    2/ As Beanzy said a longer shot with ahigher extraction ratio, look for hazelnut tones in the crema as a basic visual sign, plus greater amount of grams in the shot out (i.e. an 18g dose try at leat 36 towards 40g taste and then try 44-45g.

    Milk, quality, stretch and volume of added to the espresso is another thing to look at further on.

    I have the same combination as you. My suggestion would be to use the dose you are happy with (18g) and grind finer. Ignore the 30 sec rule and have a longer extraction, 50 sec to 60 sec should get you to the point you are aiming for. I would also make sure you tamp firmly with the Pro 800. I tested quite a few baskets over time and found the VST produced the best shots for me so that maybe another thing to consider.

    thanks to all who offered support and suggestions, it was really appreciated.

    currentlytrying to get everything working together. I’ve got 3 different beans.

    so far I’ve got the 18g coffee shots working great for a straight espresso in around 30sec.
    but I’m have trouble getting a strong coffee taste from flat white. Different beans make it slightly better but still milky. Reduced milk is an option but I don’t want to offer a 1/2 cup of flat white.

    how do I get the coffee stronger without over extraction bitterness? The 18g does seem to fill the basket any more than half way and the extraction while the right amount in 30s doesn’t have the solid single stream and crème I’ve noticed in videos.

    do I need more beans than 18g, or should I pull the lever twice to lengthen extraction and get the bitterness that will be offset by the milk? Any suggestions appreciated.

    ps I have the PID set to 120c

    Thanks. Yes I do like the timber handles etc and after all my reading Im confident I'll be very happy.

    I have the V1 Pro 800 and I don't think you will be disappointed. V2 is even better styling but basically the same functionality.

    That is a bargain but items purchased on Saturday.

    Ended up going Pro 800 V2 & Niche

    So it wasnt too far over budget. lol

    That is a ripper and a bargain all in one.
    I do wish people wouldn't wear flesh coloured clothing when photographing shiny reflective objects though.

    Theres a Strega on facebook market place for $1900. if i didnt already have a la pavoni and lambro id be all over that! its just down the road from me too. happy to check it out for you if thats a machine youre interested in.
