    With the E61 group head what is the best technique to know when I am at the correct brewing temperature?????

      Test and taste.

      Here's what I would do...

      Pour two shots with a 3 degree celcius difference between the shots. Start at the lower temperature because it will mean less time between shots because it's faster for a boiler to heat up than it is to cool down. And flush the group head before each shot to minimise the difference in temperature from the boiler to cup.

      Light roast: try 93 and 96
      Medium roast: try 90 and 93 degrees
      Dark roast: try 87 a d 90

      There is no magic to those numbers and the great James Hoffman likes his espresso 3 degrees cooler than I do so test and taste to see what you like best.

      Interested to know what others suggest.
