Assuming you have a commercial Rancilio MD40 commercial or similar and not a rocky?

Before you remove anything mark the position of the upper burr carrier before removing this will make it quicker to dial in again.
Other thing to check is that the bearings are in reasonable condition while you are going any free play particularly up and down will cause inconsistent grinding.
You will also no doubt find lots of residual oils on the internals mix up some Cafetto or similar and give the metal bits a good wash and scrub. When I stripped my DRMs one had mould on the doser vanes and both stank of rancid coffee oils :P
Maintenance for the one in use is every month or so drop the top for a good sweep and wipe over. Only takes 20 minutes or so and it is well worth it. In a commercial setting every few weeks might be a good thing
