The biggest difference Ive noticed in upgrading the grinder is repeatability.
Nuances in flavour require a palate that can recognise the difference, so dont sell a grinder short just because you cant identify them!

When I went from my old whirly smasher to a Rocky, much of the combined bitterness and sourness that I got fairly regularly disappeared.
Tweaking the Rocky (stabilise burrs, stepless) made the more subtle flavours of the coffee more evident and increased consistency.
Upgrading to a Macap M4D gave me sweet espresso, and I could easily taste the difference in the various beans, and even start to taste the fruit in my drink.

Acid is something desirable while sour not.
Anyway, AFAIK, "bright" taste coffee is something that usually happens with brand new grinders due to burrs sharpness

Hmmm,
Apart from consistency in grind that allows you to pour consistently similar espresso pours and of course, the longevity promoted by excellent engineering and manufacturing, it isnt always easy to detect subtle differences between grinders when restricting their use to espresso brewing alone.
When Ive tried comparison cupping between one reputable make of grinder with another, the most marked difference in the cup was more discernible when manual brew methods were utilised, such as Pour-Over, Plunger and the AeroPress for example. Better quality grinders seem to open out the flavour spectrum when compared this way as well as maintaining the consistency factor.
Give this a go if you still have more than one grinder at your disposal then see what you think....

Interesting thread, I started with a Sunbeam EM450 and then upgraded to a Rocky, the Rocky was more consistent once dialed in whereas the Sunbeam setting drifted a bit.
I have since gone to a Mazzer Mini and the grind quality compared to Rocky is very similar, the Mazzer comes into it own with the micrometic adjustment to finely dial-in a bean.
The Sunbeam is still used for plunger grinding and still going strong!!

this to me has been an interesting thread.
From reading some threads on CS, it is always reiterated "its all in the grind" and a better grinder will produce a better shot, but from reading this, thats not necessarily the case (or is it potentially other factors - ability of ones palette to discern differences etc).
I guess it could be some other things you aim for (consistency being perhaps the key one) but if the timer on the K3T is as useless as an ashtry on a motorbike, then again, consistency has to come down to technique rather than just equipment.
Ive hopefully organised a trial of a mazzer (SJ or mini, depending on what my roaster has spare) for a week or 2, but for me, if I cant tell the difference in the cup, it would be a hard sell (to the minister of finance) for the upgrade
Maybe a weekend of side by side shots is called for.....

OK! I standardized the pour between the two grinds and bingo! I could hardly tell the difference in taste.
It was a matter of stopping the shot just as the colour lightened.

Rusty,
While the sunbeam is a good basic grinder, theres many benefits in going for something such as the K3. Stick with it, work on getting your technique. As with any new piece of equipment, theres a learning curve. YOu might have to revisit the basics again to make sure youre heading in the right direction.
And I meant having the K3 and the sunbeam dialled in to the same pour time. I only mentioned my mazzer mini as an example.
