when i was looking at photos of the sexy machines snobs have.. i noticed that most the photos of the grinders dont beans - so simple question, do you take your beans out each night?

Oh boy, end of the day in the cafe clean out the doser with a pastry brush, vacuum with a little car gadget, wipe out hopper & doser with warm soapy rag & dry.
Try putting your nose in a grinder that hasnt been cleaned if you need a reminder of the singular odour of rancidity.
If you walk into a cafe and see a "high tide mark" in the hopper or doser - walk straight out again.

Im with you on that. On Sunday mornings I dump a kilo at a time into the Mazzer because I know that it will be gone in 45min or so. Come the afternoon I trickle the beans in with the aim of having next to nothing in the hopper/doser at closing time. We dont open on Mondays so we throw it all away.

I used to only add enough beans for the coffees being made but now, I add about 200g at a time to the hopper (I have a short hopper).
Benefits: better dosing, less time required in adding beans to the hopper
Downsides: Faster deterioration of the beans (I havent noticed that much difference to keeping them bagged up). Had to move the grinder on to the left side of the machine away from direct sunlight (but not really a hassle).
Actually, I noticed that when I kep beans stored in the bag, yhey started developing an ammoniac smell after a while. I dont have that with beans stored in the hopper now.
