If you want to go these lengths and maybe add even more flexibility, why not scan through all of the Arduino projects. Several could be adapted for the sort of thing youre talking about....
RFID (Radio Frequency Identification). You could set up an RFID sensor that runs to a timing board. Depending on the ID it recieves, it would be possible to activate the timing board for a different amunt of time, say 1 ID for your single basket, 1 for your double and 1 for your 18g bottemless.
The by wiring a pressure sensitive bypass switch you would be able to grind extra at the swipe of a sensor pad.
If only we had some engineery types to help with the design of the timing board (hint, hint! Anyone?).
It would take a bit of work but here is a start for you http://tiny.cc/aeeuk. From what I can tell you would need to provide voltage regulation to the switch though as I dont think it would handle 10A.
would be cooler if you could rig up a infrared sensor that recognized when a PF is there and turns on automatically. Then you could add a time delay switch to it thats adjustable using a dial lol 8-)

Out of interest, how does one upgrade a plummer and get a "sparkie" as the result?

The mod should be fine as ling as there is no voltage regulation provided by the switch array. If that is the case then you would be able to bypas the switch at the front and run solely of the side power switch.
Without knowing the internals of the rocky i cant say this for sure but I have just done somewhat the same thing with my Cunill.
If you can get in touch with the National Distributor (Grinders Coffee) then you should be able to ask their technical team if the motor in the rocky needs any voltage regulation.

I bought a white on/off rocky replacement switch and just switched out the front switch. It looks like a bought one and the switch just pulls out with carefu. Levering so you can accesscthe spade connectors. The mod took 30 seconds and was $14 well spent.

Jaycar only sell components, they wont modify your grinder for you.
I can see one slight problem with having the switches in parallel. You said in your original post that you wanted to have a left handed operation, youll have to swap hands whilst grinding if you wire the switches like that. The right hand to turn the main switch on/off and the left for the momentary activation.
You should be able to get a drop in replacement switch from Jaycar, just measure the original front switch and make sure that the replacement switch has the same rating. The cutout for the switch is 32mm x 12mm.
Standard warnings apply about turning the power off before sticking your hand inside .
Thanks... I had another thought and that would be to rewire the switches so that they work in parallel rather than in series. That would mean that I have the switch on the right to do the main grunt of the fill, and then can top up with the front left. This is probably the easiest way around it, as it would just be a matter of rewiring and I wouldnt need to put a new switch in... but I think I would prefer replacing the switch with a normal toggle switch...
Would Jaycar do this kind of thing or do they just sell components?
Basically, what Bullit has said is right on the money.... you should get an electrician to look at doing this for you. Since these switches are a standard DIN size, it should be possible for a sparky to get a suitable replacement for you that looks identical to the original but with the toggle operation that you are seeking. Try your local sparky first and see how you go ..... All the best,
As always with things electrical, best to get an electrician involved in the modification.
I havent heard of it being done before, and I dont mind the standard arrangement, however, I cant see any reason why it woldnt be possible, and you should be able to get a suitable switch if you look around in electronics stores and/or electrical wholesale outlets, again electrician probably could help locate the right part if he/she was interested, (cos you need switch of suitable rated voltage and current).
Another option you might consider is fitting a switch nearer the spout, so that you can activate it with the portafilter itself, as is done on some other grinders....
