With regards to the grounds staying in the chute you may be able to pump them through with a blast of air.
I use a brush myself day to day but when cleaning I have a small plastic concertina style pump that forces a blast of air down the top of the grinder which blows the chute clean.
All you need is something similar so long as it covers the hoppers top opening.
It doesnt have to be air tight like the click-clack lids (you may even be able to find a small enough one of those) so long as it covers the opening enough to force most of the air into the hopper as you squeeze the pump.
Then most of it will exit via the chute, taking the remaining coffee with it.

Ooh-wa, how embarrassment!
I have no idea how I mixed up your names, sorry guys! I mustve been reading something by Grendel, and answered while that name was in my head. I knew that having half a dozen browser pages open would get me in trouble!

Ahh yes, that is indeed an impressive grinder. . .
Ive been watching old cafes in the burbs to see if they are upgrading and disposing of old grinder that are in good nick.
