The Saeco has a pressurised group handle, and this is entirely likely to leave the puck wet on top no matter what you do.
A search of the site will show you how to "de-pressurise" it and further enhance your coffee. Be warned--this modification requires that you grind, dose and tamp correctly rather than relying on spring pressure for the 30 second extraction.

I just got a new expobar and was having trouble getting the dosing level right. Si I put a blob of playdoh in the PF and placed it in the machine. This then leveled out at the level of the showerscreen and then I placed my tamp ontop to see the level of dosing that was approperate.
Since then all is good. A good rinse of all parts and back in action. Blutac could also be used. I recomend doing this when the machine is cold.

I think Im dosing enough. Ive tried various amounts of coffee, all with the same result. When the grind is at the fine end it tends to create a very hard puck, but there is still a lot of water on top. If I release the portafiller immediately after the shot, it will spray water and coffee grounds everywhere.
Im actually starting to now think the issue is the machine not releasing the water after the shot. I might try converting the portafiller to being a non-presurised one and see what happens. I read it makes better coffee that way anyway :-)

Use this simple method for checking your dosing level:
Fill basket and tamp as you normally would.
Place a 5c piece on top of the coffee.
Lock handle into group of machine.
Remove handle and inspect the coin; it should leave a slight impression on the puck.

There is a nice simple technique many recommend on here, which I used myself when starting out.
After dosing/tamping your coffee, place a 5c piece on top. Lock the group into the head, then take out again. The coin should leave a slight impression in the puck.

almost sounds like youre not dosing enough, if youre jamming the machine then the grind is plenty fine enough
try upping your dose and that should deal with your wet puck issue, I have the same problem on my silvia machine and rocky grinder if ive underdosed a lil bit
We have a Saeco Via Venezia and recently bought a Sunbeam Espresso series grinder. Our previous being a (dare I say it) spice grinder. I immediately noticed an improvement in the coffee produced however we are no longer getting a nice dry puck after a shot. Instead there is water on the top and the grounds are like a watery mud.
Ive tried every setting on the grinder from 5 (finest) to 20 course and the portafiler is still filled with water after the shot. The Saeco seems to prefer the coursest settings only and anything under about 15 seems to jam up the Saeco and give really burnt tasting coffee.
Im wondering if anyone else has bought this grinder and had the same result? is this normal do you think?
