  • Prosumer grinder with BUILT-IN TAMPER, WHY?

    Hello,

High-grade grinder normally comes with BUILT-IN Tamper. Just wonder what this tamper for? and WHY?

Seems like only more expensive grinder has this!
It looks contradict to reality where only real hand-tamper will be used in professional world? On the other hand, I rarely see cheaper grinder with BUILT IN Tamper!!

    Helps me understand please

    Define "professional world"

Cheep grinders do not have the weight to balance / offset teh tamping..

PS... If a grind right and have fresh beans.. You dont need 10kg plus of pressure...

      Hi AM,

      Thanks for your valuable information.
When i mean Professional world I mean anyone who take really care of producing a cup of espresso

I never get any information ie. to ignore the hand-tamper and stick with bulitin tamper on the grinder On the other hand, what I have been advised is the good hand tamper affects the taste of espresso and should go get one good hand tamper :

This is why I ask WHY!!

      Cheers.

        Lots of assumptions ....

I would suggest that it is a mix of both...

1: Hand tamp is easy to use and allows you to use many different grinders and you can customise it to suit you..

2: In a busy and often cramped cafe... The Grinders with built in tamps do have a lot to offer... If used correctly and should not mean less quality..

That come back to teh Owner and Quality of Beans and teh grinder...

I have a K6 and MaCap M5 grinder and they all built in tamp and the K6 also has a small mini tamp place...

Like many food prep places.. If ya have Decaf / Organic / Etc / Etc then do you have separate tampers.. And even if ya had only one grinder if ya have sloppy staff teh tamp could end up any where..

As stated before.. Work Flow and work space..... Until ya been caught ... Then you will never know.

I prefer my own tamp... But Fit for purpose...

Besides 99.9% of people could not tell if; a good or even a bad barista used a hand tamp or the built in one on teh grinder.. And that is when they are watching..

As to what in teh cup.. It is all about managing the variables.. Besides some could say you dont even need a tamp... I have to admit that at times that is true..

And lastly... Ya watch a competition barista spend 5 min preparing his dose and sweeping and then tamping and then pulling a shot..... In a busy cafe... I think not...

Re: Prosumer grinder with BUILT-IN TAMPER, WHY?

I think it depends on the type of grinder mounted tamper. The type that are solidly mounted in place and require you to press the portafilter upward into the tamper are a waste of time IMO simply because it can be difficult to do this evenly, smoothly, etc. My MDX "had" a spring loaded tamper built-in that allowed the tamp to be done while the portafilter is resting upon the forks, but I just didnt get a feel for what I was doing with this method. I still prefer to hand tamp and also felt the spring loaded tamper was in the way while trying to dose. The only built-in tamper I would think would be worth using is the type used on the Macap M7. Later!

Both of the ones from my grinders are in the same place as the single and Pod holding baskets, the plastic tamp thingy and the other USELESS coffee stuff and the now non used milk thermometers

Same as beanflying, the built-in tamper for my Macap M5 is in a drawer somewhere; I never installed it when I unpacked the grinder upon delivery.

The M7 pictured above though is different because the pressure is brought down as the basket is supported below, unlike the usual built-in method of trying to tamp upwards (silly).

I used to tamp with 10kgs etc pressure, until when I did some training a while back, it was suggested that a super fine grind + only a very light settling tamp will produce better results.

I tried it and now Im a convert. Much easier to get a level tamp & consistent pressure from a decent hand tamper though, as compared to a fixed one on the grinder.
