    Great teamwork guys, I got it off. Time for a beer.

    Figured out it was reverse thread (thanks dimal) then jammed a screwdriver in there and smashed it with a hammer (thanks artman)

    All I need to do now is put the whole thing back together...

    Which way the nut screws on is determined by the direction of rotation of the rotor, i.e.

    If the rotor spins Clockwise, then the nut will screw on Anticlockwise, and the opposite if the Rotor spins Anticlockwise...

    On the junior it is normal thread, see if you can see the angle of the thread at the very top before the shaft starts (hard to tell in pic if a bit is visible).

    I inserted a rod into the throat of the grinder and locked the shaft inplace by bracing one of the tabs on the bottom burr carrier, loaded up the nut and gave the ratchet a sharp tap and it cracked loose with little effort.
