So I sprayed it with WD40 and tried to tap it out with a flathead but nothing. Then made the edges a bit more rough from the drill, and just enough to hammer in the easy out to stay in place. Thanks heaps guys. New problem, anyone know how to resit the shot counter from a superjolly doser?

You could try spraying the bolt with WD40 or StrikeHold to try and loosen it or reduce the seizing or corrosion which has it locked.

if you have [access to] a Dremel - you can cut a thin slot with a 'cut-off' wheel and try using a flathead screwdriver.
it is probably a stainless steel screw, so not forgiving...
it is stamped as a "12.9" screw so "high tensile" and gonna be very hard to deal with (I'm sorry to say)

Thanks Mal, i've just spent over $30 on different sizes on easy outs from bunnings. It just doesnt grip on, the screw is really some quality stuff its incredibly hard to bite into, it just shaves off. Will try to buy that kit later

Get some Easy Outs from Bunnings there is a cheap set for under $10 that is on my list of bit and pieces to buy. Probably can't link here due to sponsor only policy but just do a search.
You drill a hole then hammer in an easy out which has an anti-clockwise thread then using a spanner or pliers reverse out the screw.
