No you can't change the collar so that's not the problem. There's only two possible causes for your issue. 1. You haven't installed the upper burr properly when you reassembled the grinder. Take the hopper off again and make sure that the upper burr is held in place properly by the collar and moves up and down when you turn it. If it doesn't then realign it and set it properly. You may need to give the grind chamber a little clean first to make sure that there's no coffee getting in the way. 2. The burrs are wearing and you need to add another shim to the grinder under the bottom burr. Have you had the bottom burr out to see how many shims are in place now?

I know this is an old thread but I have a similar issue. For some time now it has not been grinding fine enough - I'm on a setting of two to get a grind that works.
Cleaned my EM0700 this morning. I think I may have inadvertently adjusted the grind setting collar while it was separated.
Does anybody know if it is possible to do something like a 'factory reset' of the grind settings?

I recently cleaned my grinder and tried to recalibrate it as i wanted the grinds a little finer. I pair it with a rancilio Silva and has been perfect to date. I have followed the instructions to recalibrate and adjusted the collar to the right 2 settings to setting 17, then reassemble collar. I have done this several times as it was still too coarse. Has anyone else experienced this? Should i maybe adjust the other way to say 13. I have wasted lots of coffee testing it, and worse have a constant headache without my caffeine fix. Any guidance would be appreciated.
