I'm not an expert by any means but I understand that the different RPM cause different particle distribution that creates a different flavour profile.
That said I think this is all at the very margins of taste perception but once you've sunk a load of money on a grinder you are probably going to be interested in exploring all possibilities.
Why would you want to vary the RPM of your grinder for home use? wayyyy to much stuffing around got an espresso imho.
I have found that it makes a big difference in taste. It’s another variable that you can play with as much or as little as you like. I tend to set and forget mine, use it at a certain speed for a few weeks or even a few months, until I get curious about what might happen if I change the speed.
I think lower RPM is also supposed to reduce the amount of heat generated by the burrs, and thus heat the coffee grounds less. No idea if it makes a real difference.
