I think lower RPM is also supposed to reduce the amount of heat generated by the burrs, and thus heat the coffee grounds less. No idea if it makes a real difference.

I have found that it makes a big difference in taste. It’s another variable that you can play with as much or as little as you like. I'm not an expert by any means but I understand that the different RPM cause different particle distribution that creates a different flavour profile.
That said I think this is all at the very margins of taste perception but once you've sunk a load of money on a grinder you are probably going to be interested in exploring all possibilities.
