Hmmmmm. What are you grinding for, an espresso machine, a moka pot, a plunger, filter or turkish?
You might have found that you only require a limited range, others might have different needs. The grinder is universal and caters for a wide variety of users.
Numbers don't mean much in this sense either - once you have found an optimal setting for the beans you currently use you might find that the grind needs to be tweaked as the beans age - one or two clicks might be enough. Switch to fresh beans, a different roast or a new variety... another click or two in either direction. But number 11 on your grinder will be different to number 11 on my grinder (this is a fact as mine has been modded) and even if they were precisely set at the factory, the variation in beans between what you have and what I have will mean that numbers would still be meaningless. The variation in coffee making equipment makes for an extra layer of unpredictability.
Modded - I have replaced the impeller as the original was worn down. The new one was 3d printed and I suspect it is a little thicker than the original which forces the lowere bur to be just a smidge higher. The result is that a perfectly dialed in grind for my espresso machine is now indicated on the grinder somewhere in the percolator range! I don't care as the coffee comes out as 30mL in 30 seconds (or very close to it) and it tastes fine to me.
I do agree though - it is a stupid world. But stick with what works for you and let's hope that some sanity eventually prevails north of the equator.
