    I am not an expert, I did make a few espresso shots with the Unimodal burrs, I think the High Uniformity has more fines which make a slightly muddy pour over with less clarity. But depending how developed your palette is you may not even notice and if you are only making 10% pourover I think they would do a decent job.

    The Unimodal for espresso generally have less body and more clarity, I like medium/dark beans so this is why I am sticking with the High Uniformity burrs.

    Good thing with the DF64 is you have a path to other grinders with the 64mm burrset, I now have a Lagom 64 and swapped the burrs over.

    To get started you could even grab the DF64 and use the stock burrs, they are $849 at Alternative Brewing who are a site sponsor. The SSP burrs are about $330 in Oz so you could always add those later, they do popup on the for sale section here now and again.

    How much difference is there in the unimodal to high uniformity? I assume it isn't going to make a pour over undrinkable, but perhaps only 90% of what it could have been? I'm struggling to know what's the trade off, given I'm likely 90% espresso based drinks. Would you even be able to tell if you didn't drink a UNI next to a HU pour over?
    This a relatively large jump from the BES and I haven't had a lot of experience around more higher end consumer products, different burrs etc..

    I did see on OzB this week the DF64 with various SSP burrs going for just under $1.1k if that’s useful to the discussion.

    The DF64 / Niche are going to be your best bets I reckon.

    The Mignon XL has the worm gear adjuster and would really take some work to change settings between espresso and filter/V60.

    The Niche would be the easiest IMHO as changing grind sizes is a breeze but the workflow does take some getting used to.

    The DF64 with SSP Unimodal burrs would have the edge in terms of pour over flavour but if you use medium/dark beans then you might find other burrs more suitable.

    I had a Niche for a year two before trying out a DF64 V3 with the Unimodal SSP burrs, I haven't used the DF64 for pour over though.

    $1000AUD Grinder Decision

    I'm looking to purchase a new grinder around the $1000AUD mark, this include Niche, DF64 with upgraded burrs, or Eureka Mignon XL. I'm currently using the grinder from my Barista Express, and found the inbuilt grinder annoying to dial in. I go from clogged to under 20secs shots with one step.

    I drink predominately cappuccinos, but getting more into less milky drinks. I do have a french press, vietnamese phin and want to get a V60 as well. At the moment I don't tend to swap these as it's a pain with the grinder and the results I've gotten are only OK for the effort of adjusting the grind.

    I'm leaning towards the XL, as I don't think I'll want to weigh beans ever time I make a coffee, and I don't think the 0.1-0.2g retention will be earth shattering especially coming from the stock BES grinder. Plus it has the stop so can clear a few grams of beans, adjust the grind for a french press/ v60.


    Anything I'm missing should be aware of?
