Hi,
I recently did a rebuild of a second hand Vario that had a few issues, so am fairly familiar with how they go together.
There are a few things to check. One would be the rubber belt that turns the burrs, over time these wear down and need to be replaced.
Another would be the large plastic pulley that turns the lower burr. If the teeth on this are damaged/filled with fine coffee, that might be causing the belt to slip. Finally, it could also be the smaller motor pulley which is the toothed metal cylinder that sits over the motor shaft. This is secured with a small grub screw.
This screw could be loose, or might have worn a grove into the motor shaft, which is causing the pulley to slip, which might be what's causing your grinder to slip when you add resistance to the burrs.
This is a handy guide from Baratza about servicing the belt and pulley. Refer to page 6 of this guide for some visuals and how the metal pulley should be mounted onto the motor shaft.

Hope that's some help,
Cheers
