It would be interesting to see a new model, though I am not sure they even need to do something new, just a redesign of the existing one. Isn't it still struggling to keep up with demand?

Well said, Tom. I'd agree with you that those that have used the Niche are generally big fans of the overall design and the sheer ease of the workflow. None of these are being questioned by any means. What i was suggesting is that the existing external look and feel of the Niche Zero has been around for a few years now, so something new in how it presents would continue to excite its fans.
In regards to the premium materials comment i had made, that is my opinion alone, but yes the plastic top cover and the chute are examples of that. i would also argue that when looking at some of the other single dose grinders that have come out following the NZs initial popularity, they have opted to use more matte finishes (e.g. Varia, Lagoms, even the Eurekas) which just give it a more modern feel. The shiny gloss white/black feels very kitchen appliance like and addressing this wouldnt be a significant departure from any philosophy as such.

I'm a big fan of the Niche. Onto my third one (please don't ask!). The original Niche did so many things that no one else was doing, and especially not for that price.
What you are saying iRate makes Phillydelphia are suggesting makes a lot sense. The design of the new version looks identical to the original.
My guess would be not so much a modification option but rather a completely seperate flat burr version in the same body.
Choice of burr will be interesting. Ditting, SSP, Mazzer …
Assuming its a 64mm burr, and it may not be), there are a lot of new competitors in that single dosing space. DF64 (various models), Moca SD, Timemore 064s (launching this week on Kickstarter at US$299), Acaïa/Weber, Zerno and Kopi Deva. And of course the P64 which has been around a while now.

My take on this proposed update is this - that a flat burr set is most probably going to be an additional option rather than a replacement for the simple reason that there are strong advocates for both the conical AND the flat options, depending on personal taste and coffee making preference.
Not sure where the call for more premium materials is coming from to be honest. Anyone who has pulled their niche apart (and there are youtube videos that do this) is impressed at the quality and built-in redundancy of both the internals (motor and mazzer burrs) and external housing. When I pulled mine apart to re-stain the woodwork I was surprised to find 2 spare springs for the burr housing hidden away in the base, just in case you lose one or both. Sure, the plastic top cover and chute could be a nicer premium material but that's about it.
IMHO, apart from its premium single dose functionality, the best thing about the Niche is how UK based Nicholson Engineering have kept loyal to their kick starter origins with it and have put most effort into quality control and customer service rather than shifting to mass production and offering multiple consumer options. There is now a thriving market for Niche mods covering everything from portafilter holders to upgraded and machined replacement for the wood feet and base.
If they moved away from this philosophy I think they would lose a lot of love that has surrounded the Niche Zero from Day 1.

am wondering if the flat burr design was largely in response to the interest that Sheldon had created with his aftermarket mods.
in any case I’d personally love to see the niche guys come out with a slightly more elegant shape and using some more premium materials. Yes that would add to the cost but I think it would help the NZ look less kitchen applicance like. The addition of some variable rpm would be amazing also

Funny you should mention that. A patent design was lodged late last year by Niche that has one major change from the current Niche Zero....a flat burr set. The patent design application number is: WO 2023274895. Application was released on the WIPO website on 5th Jan this year:

Is an update to the Niche ever going to come?
I don't keep my ear to the "coffee gossip" ground these days but I was curious if anyone here in the know has heard of any possibility of the Niche getting an upgrade in the near future?
Given that the grinder has been around for 5+ years I feel like it might be due an update
That having been said, they still seem to sell out regularly so maybe it's a case of "if it ain't broke don't fix it"
