Plunger grind settings are a little personal. I have seen commercial plunger grinds nearing raw sugar size which takes a while to get a good brew. For my own preference is to grind more like white sugar or even a little finer. This means I can drop the steep time lower and to my palate is a better brew but you do get a little more mud in the bottom of the cup.
